Lascio le pantofole e mi tengo i tacchi a spillo
Sono scivolata nel 2013 con un risotto ai funghi porcini. Porcini veri, raccolti e regalati dai genitori del mio collega. Lo preparo con calma, facendo il brodo vegetale vero invece di velocizzare con un dado già bello che pronto. E mentre cipolla, sedano e carote bollono, io penso. Perché cascasse il mondo all'inizio dell'anno si riordinano i pensieri.
Risotto ai funghi porcini
Ingredienti per 2 persone
160 gr riso carnaroli
1 bel fungo porcino
1 scalogno
2 cucchiai di parmigiano reggiano
brodo vegetale
un pezzetto di burro
sale e pepe qb
Mettere il burro a sciogliere in una padella, a fiamma medio bassa. Tagliare lo scalogno a velo e metterlo nella padella. Nel frattempo tagliare a pezzettini il porcino, aggiungerlo allo scalogno e farlo rosolare per un paio di minuti. Quindi aggiungere il riso e farlo tostare - sempre un paio di minuti - portarlo a cottura aggiungendo un poco alla volta il brodo vegetale. Verso fine cottura regolare di sale. Mantecare con il grana e servire in tavola con del pepe macinato all'istante.
